Cassava Mayonnaise Recipe

Ingredients for making cassava mayonnaise:

 2 cups of peeled and chopped cassava

 1 cup of peeled and chopped cassava

 1 cup of peeled and chopped carrots

 1 cup of chopped peas or string beans

 2 cups of mayonnaise

 ¼ cup of chopped parsley

 ¼ cup of chopped chives

 ½ unit of lemon (juice)

 Black pepper

 salt

How to make cassava mayonnaise:

The first step of this mayonnaise salad recipe is to put all the vegetables in a pan, cover with water and bring to medium heat. Let the vegetables cook for 15-20 minutes, or until they are tender. Drain and let cool.

When the vegetables are cold, mix with mayonnaise (which can be industrialized or homemade), parsley, chives and lemon juice, and season to taste with salt and pepper.

Place the cassava mayonnaise on a plate or serving bowl, and set aside in the refrigerator for +/- 1 hour. Serve as an accompaniment to, for example, fried tambaqui, and good appetite!
